SOUTH JORDAN — A well-known Salt Lake Mexican restaurant has expanded to the growing dining and entertainment district around the new Salt Lake Bees baseball stadium.
Local leaders gathered on May 15 to inaugurate Taste of Red Iguana in Downtown Daybreak in South Jordan, located adjacent to Ballpark at American First Square. It represents the popular brand's first foray outside of Salt Lake City, home to two Red Iguana locations.
The new location is a sit-down eatery "that delivers the true Red Iguana experience," according to a statement from Larry H. Miller Real Estate, the moving force behind Downtown Daybreak, operable year-round. The menu contains most of the items from the original locations, including "the signature moles."
The late Ramon Cardenas Sr. launched Red Iguana in 1985, though he had operated a different Mexican restaurant before that, and it has become a popular go-to spot. Now managed by Lucy Cardenas, the Cardenas Sr.'s daughter, and Bill Coker, it previously operated in the food court in City Creek Center, but that location has closed.
Taste of Red Iguana is one of many restaurants and retail outlets in Downtown Daybreak, 5434 W. Center Field Drive. More outlets are coming and another phase of construction to start later this summer will add 40,000 square feet of retail and dining space and a hotel, according to Larry H. Miller Real Estate.
