SALT LAKE CITY — If you're in as much disbelief as I am that the summer is nearly over, you're in good company. Before we know it, we'll be deep into fall and the back-to-school grind, or at least school kids, college students, and teachers will. But for some reason, this transition affects everyone.

This time of year is stressful: preparing for school, preparing for changes, seeing your kids grow up, and getting back into a different routine.... even if Mother Nature doesn't follow suit. If the thought of having to pack lunches again adds to this stress, then I've got some lunchbox inspiration that will help ease that stress.

These are quick and easy lunch box ideas that will make your life easier and make your kids happy. Plus, they're all from registered dietitians, so you know that these lunch boxes will nourish your kids to help them learn in school, play, and feel good.

11. Easy Tuna Edamame Salad

(AD) Don’t let the fish counter scare you away from buying seafood at the supermarket! 🐟 🛒 As you’re working on eating the recommended 2 servings of seafood a week, keep in mind that there are multiple places throughout supermarkets that you can buy fish. ✔️Fish Counter: 🎣 This is where I go when I know I’m going to make fish within a day or two of grocery shopping. If any of our favorite fish is on sale, I often buy it fresh and freeze it for another week. ✔️Sushi Station: 🍣 Many supermarkets have separate sushi counters where you can buy freshly made sushi, which is perfect for a meal on the run. ✔️Freezer Aisle: ❄️ You can find frozen fillets of fish in most supermarket freezer sections, and many brands have pre-seasoned fish or frozen fish meals that can be cooked quickly and easily. Frozen seafood is just as good for you as fresh, and can be saved for up to 6 months. Look for a certification such as Best Aquaculture Practices or Marine Stewardship Council on the bag. ✔️Shelf Stable: 🥫Canned tuna is a staple in many people’s pantries, but there are many other types of fish like salmon, sardines, and anchovies that come in cans, pouches, and tins and make for quick, easy, and budget-friendly meals. This Tuna Edamame Salad is just one example – get the recipe here ➡️ ✨ https://jessicalevinson.com/easy-tuna-edamame-salad/✨ (clickable link @jlevinsonrd). — Do you have a favorite type of seafood to buy?
