Chicken Caprese Yield: 5 Servings
Ingredients:
5 each Fresh 4oz Chicken Breast
1 tbsp. Olive Oil
¾ tsp. Black Pepper
¾ tsp. Dried Basil
1 tsp. Granulated Garlic
¼ tsp. Chili Powder
1 tbsp. Tomato Paste
2 each Fresh Tomato, Sliced
5 slices Fresh Mozzarella Log, 1 oz. Slices
1 tbsp. Olive Oil
5 leafs Fresh Basil, Hand Torn
5 tsp. Balsamic Glaze
Preparations:
1. Toss chicken with oil, season with pepper, basil, garlic and tomato paste.
2. Bake chicken on a pan at 350F, for 10-12 minutes or until an internal temperature of 165F is reached.
3. Top each chicken breast with mozzarella cheese, then two slices of tomato.
4. Return back to the oven for 2-3 minutes to allow the cheese to melt.
5. Sprinkle basil over each chicken breast, and drizzle with balsamic glaze.
